I actually got out of the house and went mini golfing with my friends. The good weather and fun times created an obsession with sweet, girly Summer things. Hope your summer is just as sweet.

6 Months!

Today officially marks my completion of  six months of Meatless Mondays!!! I'm so excited (if you can't already tell). The program is exactly how it seems- you eat no meat on Monday. To celebrate this lovely day of mine I thought I'd share what I had for lunch.  It's one of the few meals that I've had that didn't make me crave meat afterwards, and it was really easy to make. I hope you enjoy it too. =)

Expect a Beautiful Summer

Every year, on my first day of Summer, I go outside for a few hours and start to read a book for school. This year for my English class I have to read Great Expectations by Charles Dickens and Extremely Loud and Incredibly Close by Jonathon Safran Foer. I'm excited to read them both, but I hope I'm able to finish them quickly so I have some Summer time for the stack of books I haven't read that I compulsively keep adding to. Hope your Summer begins on a high note!

Yesterday I ventured off to see my little cousin in her dance recital. I could have done with out the getting lost on the trip there, but it was still a good day. The weather was perfect and it was a lot of fun being out of the house in a girly outfit when I should be home studying for exams. Oh well. I hope everyone is having a lovely Fathers day. I didn't see mine today because he was with my brother at a tournament, but it gave me time to make dad cookies. Hope he enjoys them.
